Italians have been stereotyped like this for years. I think a lot of them like being thought of as being associated with the Mafia, and a lot don't. It's like most races are stereotyped for one thing or another and some are ok with it and some are not. Jews are stereotyped for being cheap but not all of them are. The thing is that characters in shows like the Sopranos are all played by Italians, for the most part anyway, so people think well they're ok with it. But you're right, I am sure if they did a show on cheap jews there would no doubt be a total uproar.
